{"id":906,"date":"2009-07-31T14:01:11","date_gmt":"2009-07-31T13:01:11","guid":{"rendered":"http:\/\/www.crossingitaly.net\/travel\/?p=906"},"modified":"2009-08-01T14:08:41","modified_gmt":"2009-08-01T13:08:41","slug":"two-italian-recipes-croutons-and-asparagus-with-truffles","status":"publish","type":"post","link":"https:\/\/www.crossingitaly.net\/travel\/906\/two-italian-recipes-croutons-and-asparagus-with-truffles\/","title":{"rendered":"Two Italian Recipes: Croutons and Asparagus with Truffles"},"content":{"rendered":"<p><strong><img loading=\"lazy\" decoding=\"async\" class=\"alignleft size-full wp-image-907\" src=\"http:\/\/www.crossingitaly.net\/travel\/wp-content\/uploads\/scaglie1.jpg\" alt=\"scaglie1\" width=\"240\" height=\"180\" \/><span style=\"text-decoration: underline;\">Croutons with truffles<\/span><\/strong><\/p>\n<p><strong>Ingredients <\/strong>(amount for 12 croutons):<br \/>\n12 slices of white sandwich bread,<br \/>\n50 gr. of white truffles,<br \/>\n50 gr. of butter,<br \/>\n2 tablespoons of grated Parmesan cheese,<br \/>\nhalf a lemon, squeezed,<br \/>\na clove of garlic. <img loading=\"lazy\" decoding=\"async\" class=\"alignright size-full wp-image-908\" src=\"http:\/\/www.crossingitaly.net\/travel\/wp-content\/uploads\/asparagi.jpg\" alt=\"asparagi\" width=\"240\" height=\"180\" \/><\/p>\n<p><strong>PREPARATION:<\/strong><br \/>\nput the butter and a chopped fine clove of garlic in a pan and let the butter melt over low heat;<br \/>\nclean the truffles lightly with and wash them carefully and quickly in warm water, then grate and add them to the melted butter;<br \/>\nheat for a few minutes without saut\u00e9 them and mix;<br \/>\nadd the grated parmesan and a little broth if the mixture is too thick;<br \/>\nbefore removing from the fire, put the lemon juice and a bit of its grated peel;<br \/>\nafter toasting the bread, spread the cream obtained and serve hot.<br \/>\n<strong><span style=\"text-decoration: underline;\">Asparagus with truffles<\/span><\/strong><\/p>\n<p><strong>Ingredients <\/strong>(4 servings):<br \/>\n800 gr. asparagus,<br \/>\n1 medium size truffle<br \/>\n6 anchovy fillets,<br \/>\nmayonnaise,<br \/>\nsalt.<!--more--><\/p>\n<p><strong><img loading=\"lazy\" decoding=\"async\" class=\"alignleft size-full wp-image-909\" src=\"http:\/\/www.crossingitaly.net\/travel\/wp-content\/uploads\/orima2.jpg\" alt=\"orima2\" width=\"350\" height=\"262\" srcset=\"https:\/\/www.crossingitaly.net\/travel\/wp-content\/uploads\/orima2.jpg 350w, https:\/\/www.crossingitaly.net\/travel\/wp-content\/uploads\/orima2-300x224.jpg 300w\" sizes=\"auto, (max-width: 350px) 100vw, 350px\" \/>PREPARATION:<br \/>\n<\/strong>wash the asparagus;<br \/>\nremove the hardest part of them;<br \/>\nput them to boil for about 20 minutes in a container high enough;<br \/>\ndrain and put them with the tips toward the center on a serving dish;<br \/>\nadd the anchovies into pieces;<br \/>\nadd the salt and the truffles cut in slices with the appropriate gear.
