The tomato is the main difference: it is an ingredient or it is not?<\/p>\n<p>Some people prefer the spaghetti with clams without tomato sauce, others are with it, some eventually accepted to crush some cherry tomatoes in the oil. <!--more--><img loading=\"lazy\" decoding=\"async\" class=\"alignleft size-full wp-image-1423\" src=\"http:\/\/www.crossingitaly.net\/travel\/wp-content\/uploads\/vongole-pomodoro.jpg\" alt=\"vongole pomodoro\" width=\"240\" height=\"180\" \/>However with or without tomato, you need fresh clams and you have to let them purge in water and salt for about an hour.<br \/>\n<span style=\"text-decoration: underline\"><strong><br \/>\nINGREDIENTS <\/strong><\/span><br \/>\n\u2022 500 gr. clams<br \/>\n\u2022 a dozen sprigs of parsley<br \/>\n\u2022 1 clove garlic<br \/>\n\u2022 5 tablespoons extra virgin olive oil<br \/>\n\u2022 pepper<br \/>\n\u2022 160 gr. spaghetti<br \/>\n\u2022 salt<br \/>\n\u2022 5 \/ 6 cherry tomatoes <img loading=\"lazy\" decoding=\"async\" class=\"alignright size-full wp-image-1424\" src=\"http:\/\/www.crossingitaly.net\/travel\/wp-content\/uploads\/vongolone.jpg\" alt=\"vongolone\" width=\"240\" height=\"240\" srcset=\"https:\/\/www.crossingitaly.net\/travel\/wp-content\/uploads\/vongolone.jpg 240w, https:\/\/www.crossingitaly.net\/travel\/wp-content\/uploads\/vongolone-150x150.jpg 150w\" sizes=\"auto, (max-width: 240px) 100vw, 240px\" \/><\/p>\n<p><span style=\"text-decoration: underline\"><strong>Recipe: Spaghetti with clams (white = with no  tomato) <\/strong><\/span><\/p>\n<p>Chop 2-3 cloves of garlic and fry in a pan with olive oil until they slightly brown.<\/p>\n<p>Then add the drained clams and cook them over high heat for 2-3 minutes until they all opened.<\/p>\n<p>At this point remove shells from half of the clams and live aside the rest for decoration (the half shelled remains in the pan with oil).<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"alignleft size-full wp-image-1425\" src=\"http:\/\/www.crossingitaly.net\/travel\/wp-content\/uploads\/padella-von1.jpg\" alt=\"padella von\" width=\"240\" height=\"180\" \/>Add the finely chopped parsley, salt and a touch of pepper and then pour into the pan the spaghetti (or vermicelli) cooked very al dente.<\/p>\n<p>Make spaghetti season in the oil for one minute and serve immediately decorating with other non-shelled clams.<\/p>\n<p><span style=\"text-decoration: underline\"><strong>Variant with crushed cherry tomatoes: <\/strong><\/span><\/p>\n<p>It is cooked in the same way as the first recipe, but after having shelled half of the clams, 7-8 crushed tomatoes are added to the oil with finely chopped parsley, salt and pepper.<\/p>\n<p>Cook for one minute over high heat.
