This recipe is often imitated and varied as each family might easily change the ingredients.<br \/>\n<span style=\"text-decoration: underline\"><strong><br \/>\nIngredients: <img loading=\"lazy\" decoding=\"async\" class=\"alignright size-full wp-image-1293\" src=\"http:\/\/www.crossingitaly.net\/travel\/wp-content\/uploads\/zuchine-rip-5.jpg\" alt=\"zuchine rip 5\" width=\"240\" height=\"160\" \/><\/strong><\/span><\/p>\n<ul>\n<li>3 anchovy fillets in oil<\/li>\n<li>2 tablespoons salted capers<\/li>\n<li>2 onions<\/li>\n<li>Milk<\/li>\n<li>1 tablespoon marjoram<\/li>\n<li>Extra virgin olive oil<\/li>\n<li>50 gr. grated Parmesan Cheese<\/li>\n<li>Pepper<\/li>\n<li>20 gr. pine nuts<\/li>\n<li>1 medium tin of tuna in oil<\/li>\n<li>2 eggs<\/li>\n<li>8 medium-size courgettes<\/li>\n<\/ul>\n<p><strong><span style=\"text-decoration: underline\">Preparation:<\/span><\/strong><\/p>\n<p><span style=\"text-decoration: underline\">&#8211; Wash the zucchini and then boil them in salted water for about 5-7 minutes.<\/span><br \/>\n&#8211; Meanwhile, cut the bread into cubes and let it soften in a bowl with a tablespoon of milk.<br \/>\n<span style=\"text-decoration: underline\">&#8211; Clean and chop the onions finely and fry in two tablespoons of oil together with the chopped anchovies.<\/span><!--more--><br \/>\n<img loading=\"lazy\" decoding=\"async\" class=\"alignleft size-full wp-image-1294\" src=\"http:\/\/www.crossingitaly.net\/travel\/wp-content\/uploads\/zucchine-rip-7.jpg\" alt=\"zucchine rip 7\" width=\"240\" height=\"192\" \/>&#8211; Drain the courgettes and let it cool.<br \/>\n<span style=\"text-decoration: underline\">&#8211; Eliminate the ends of the courgettes and cut them in half lengthwise.<\/span><br \/>\n&#8211; Empty them with a teaspoon, being careful not to break the skin.<br \/>\n<span style=\"text-decoration: underline\">&#8211; Add the pulp to the mixture of onion and anchovies, letting it cook for a few minutes.<\/span><br \/>\n&#8211; Meanwhile chop together bread, drained tuna, pine nuts, capers (previously desalted in water).<br \/>\n<span style=\"text-decoration: underline\">&#8211; Turn the oven to 180 degrees.<\/span><br \/>\n&#8211; In a bowl mix all the chopped ingredients: the fried pulp of courgettes, onions and anchovies, Parmesan, marjoram, eggs and pepper.
