{"id":1138,"date":"2009-10-02T17:20:21","date_gmt":"2009-10-02T16:20:21","guid":{"rendered":"http:\/\/www.crossingitaly.net\/travel\/?p=1138"},"modified":"2009-10-02T17:20:22","modified_gmt":"2009-10-02T16:20:22","slug":"pasta-alla-norma-a-dish-of-sicilian-origin-now-a-must-of-italian-cuisine","status":"publish","type":"post","link":"https:\/\/www.crossingitaly.net\/travel\/1138\/pasta-alla-norma-a-dish-of-sicilian-origin-now-a-must-of-italian-cuisine\/","title":{"rendered":"Pasta alla Norma a dish of Sicilian origin now a must of Italian Cuisine"},"content":{"rendered":"<p><strong><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-1139\" src=\"http:\/\/www.crossingitaly.net\/travel\/wp-content\/uploads\/norma1gr.jpg\" alt=\"norma1gr\" width=\"400\" height=\"266\" srcset=\"https:\/\/www.crossingitaly.net\/travel\/wp-content\/uploads\/norma1gr.jpg 400w, https:\/\/www.crossingitaly.net\/travel\/wp-content\/uploads\/norma1gr-300x199.jpg 300w\" sizes=\"auto, (max-width: 400px) 100vw, 400px\" \/><\/strong><\/p>\n<p><strong>Pasta alla Norma <\/strong>is a first course of Sicilian origin, a specialty of <strong>Catania<\/strong> paying homage to the most beautiful and famous opera of <strong>Vincenzo Bellin<\/strong>i by Catania:\u00a0 <strong>Norma.<br \/>\n<\/strong>Pasta alla Norma is a dish prepared with <strong>a few simple ingredients<\/strong> that have to be of the highest quality.<\/p>\n<p><span style=\"text-decoration: underline\"><strong>Ingredients <\/strong><\/span><img loading=\"lazy\" decoding=\"async\" class=\"alignright size-full wp-image-1140\" src=\"http:\/\/www.crossingitaly.net\/travel\/wp-content\/uploads\/notrma4.jpg\" alt=\"notrma4\" width=\"240\" height=\"180\" \/><\/p>\n<ul>\n<li>360 gr. striped penne<\/li>\n<li>600 gr. plum tomatoes (the ones to make the sauce)<\/li>\n<li>1 large eggplant<\/li>\n<li>salted ricotta cheese to grate or fresh ricotta cheese<\/li>\n<li>basil<\/li>\n<li>1 clove garlic<\/li>\n<li>extra virgin olive oil<\/li>\n<\/ul>\n<p><span style=\"text-decoration: underline\"><strong>Preparation <\/strong><\/span><\/p>\n<p>&#8211; Cut the eggplant into slices 1 cm thick and arrange in layers in a colander with a bit &#8216;of salt.<\/p>\n<p><!--more--><\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"alignleft size-full wp-image-1141\" src=\"http:\/\/www.crossingitaly.net\/travel\/wp-content\/uploads\/norma5.jpg\" alt=\"norma5\" width=\"240\" height=\"180\" \/>&#8211; Leave them for an hour, with a weight on top to drain water.<\/p>\n<p>&#8211; Prepare the sauce by passing tomatoes in a vegetable mill.<\/p>\n<p>&#8211; Then put the garlic in a saucepan with a little extra virgin olive oil and let it very slightly brown.<\/p>\n<p>&#8211; Add the tomato puree, a few leaves of basil, a bit of salt and cook for about 15 minutes.<\/p>\n<p>&#8211; Fry the slices of eggplant in plenty of oil and then wipe the excess oil with paper towels.<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"alignright size-full wp-image-1142\" src=\"http:\/\/www.crossingitaly.net\/travel\/wp-content\/uploads\/ricotta8.jpg\" alt=\"ricotta8\" width=\"240\" height=\"160\" \/>&#8211; Keep aside 4 slices to decorate the dishes and cut the others into strips.<\/p>\n<p>&#8211; Add the cut eggplant into the pot of tomato sauce.<\/p>\n<p>&#8211; Then put pasta in the boiling water and wait for it to be cooked.
